What is a freeze dryer and how does it work?
A freeze dryer is a sophisticated food preservation device that uses lyophilization (sublimation) to extract moisture from food. The device creates a deep vacuum inside the chamber, freezes food to -40°C (-40°F) or below, and then gradually warms the tray elements. The food’s cellular integrity is preserved as a result of the frozen moisture in the food going straight from ice to vapor without first becoming liquid.
What foods can I process in a freeze dryer?
It is possible to treat almost anything that contains water:
Apples, strawberries, berries, corn, peas, tomatoes, and leafy greens are examples of fresh fruits and vegetables.
Comprehensive home-cooked meals include pulled pork, curries, beef stew, lasagna, and casseroles.
Dairy and liquids include ice cream, shredded cheese, yogurt drops, raw or pasteurized milk, and raw eggs.
Meats and seafood include poultry, shrimp, wild game, raw or cooked beef, and pet treats.
Candy and desserts include cheesecake pieces, marshmallows, gummy worms, and Skittles.
Note: Because fat prevents the sublimation process, foods that are very high in pure fat or high-sugar syrups—such as plain peanut butter, pure honey, butter, or straight oil—do not freeze dry well.
What are the electrical requirements for operating a freeze dryer in Canada?
Most small and medium freeze dryer units run on a standard Canadian 110V, 15-amp household circuit. However, larger commercial models or extra-large units typically require a dedicated 110V/20A or 220V circuit. We always recommend running your machine on its own dedicated circuit to prevent breaker trips during the simultaneous freezing and vacuum pump phases
What is the difference between an oil pump and an oil-free scroll pump?
-
Standard Oil Vacuum Pumps: Highly durable, deep-vacuum performance, but require periodic oil changes (typically after every 4–6 batches) and regular filtering to keep the pump clean.
-
Oil-Free Scroll Pumps: Virtually maintenance-free with zero oil changes required. They are quiet and clean, though they come with a higher initial purchase price.
How do I store food after taking it out of the freeze dryer?
To achieve a 25-year shelf life, store your freeze-dried food in heavy-duty 7-mil Mylar bags paired with an appropriately sized oxygen absorber (e.g., 300cc to 500cc depending on bag volume). Seal the Mylar bag completely using an impulse heat sealer. For short-term snacking (1–3 years), glass Mason jars with vacuum-sealed lids or airtight snap containers work great.
Do I have to pay import duties or cross-border fees when buying from FreezeDryer.ca?
No! When you order your freeze dryer from FreezeDryer.ca, you are buying directly within Canada. The price listed at checkout is in Canadian Dollars (CAD), with zero hidden border fees, unexpected brokerage charges, or surprise customs tariffs at delivery.
How does a freeze dryer compare to a dehydrator or freezer?
A freeze dryer retains up to 97% of natural nutrients, original shape, color, and flavor, while a typical dehydrator employs heated air to evaporate water, which cooks the food, shrinks it, and destroys heat-sensitive vitamins. Freeze-dried food keeps for more than 25 years at room temperature and doesn’t need constant electricity once packaged, unlike chest freezers.
How long does a typical batch take in a freeze dryer?
A cycle typically lasts 24 to 36 hours. Three main factors determine the length of a cycle:
Moisture Content: Compared to cooked meats, watermelon and pineapples require more time.
Thickness and Density: Compared to whole cherries or thick cuts of meat, sliced strawberries dry considerably more quickly.
Pre-Freezing: You can save four to six hours of machine processing time by putting your food in a deep chest freezer before beginning your freeze dryer cycle.
How noisy is a home freeze dryer?
A freeze dryer makes about as much sound as a standard room air conditioner or a modern dishwasher (around 50–60 dB). The primary sound comes from the refrigeration compressor cycles and the exhaust hum of the vacuum pump.
Where should I place my freeze dryer in my house?
Set up your unit in a well-ventilated area with moderate temperatures (ideally between 10°C and 24°C / 50°F and 75°F). Garages, basements, utility rooms, or insulated sheds work great. Avoid placing your freeze dryer in uninsulated Canadian garages during extreme summer heat or sub-zero winter temperatures, as room temperature directly affects condensing efficiency.
How do I know if the food is completely dry?
When the cycle ends, check the thickest piece of food on the trays before turning off the vacuum. Break a piece in half and touch the center:
-
If it feels cold or clammy to the touch: Moisture remains! Return the trays to the unit and run an additional 2 to 4 hours of “Extra Dry Time.”
-
If it is warm, dry, and crunchy/powdery: The batch is completely dry and ready to package immediately.
How is a heavy freeze dryer delivered to my home or farm?
Because a freeze dryer is heavy, precision-engineered equipment, machines ship safely via LTL Freight on a wooden pallet. Freight carriers deliver directly to your residential driveway, farmgate, or commercial loading dock using a liftgate truck.
